  • Cheesy Broccoli-Potato Soup

    Ingredients

    • • 2 cups chicken broth
    • • 1/3 cup chopped onion
    • • 1 package (10 oz.) frozen chopped broccoli
    • • 1 1/3 cups Potato Buds mashed potatoes (dry)
    • • 2 cups cut-up chicken (cooked)
    • • 2 cups shredded Swiss cheese (8 oz.)
    • • 2 cups milk
    • • 1/2 tsp. salt

    Instructions

    Heat broth, onion, and frozen broccoli to boiling in a 3-quart saucepan. Reduce heat; cover and simmer for 5 minutes, stirring occasionally. Stir in potatoes until well blended. Stir in remaining ingredients. Heat over low heat about 5 minutes, stirring occasionally, until hot and cheese is melted.
